Pasta with salmon and cream sauce

PREPARATION:

  1. Boil pasta until al dente for 8 minutes in salted water in a large saucepan Drain the water and return the pasta to the saucepan. Put it aside. 
  2. Cut boneless soft-salted salmon into medium sized cubes.
  3. Heat the olive oil over medium heat in a large pan. Fry the salmon for 5-7 minutes, stirring gently.
  4. When the fish is ready, add cream and finely grated cheese (keep a little cheese for later). Season with salt and pepper, add oregano and stir over medium heat until the sauce thickens. 
  5. Add boiled paste, mix. Sprinkle with remaining parmesan and serve hot. Buon appetito!
